What types of yeast are you using to make your soda? My local shop suggest champagne. Others say use Ale. What do you use and why?

OK, so it looks like no one is responding to posts but me so I will reply my results.

Ale yeast seems to make a better tasting soda. It was less yeasty. I did produce more sediment (which was yeast) but if you pour the soda right that does not matter.

My ale yeast's temp range is like 59 to 80ish. It did not produce as much carbonation but I think it would have if I left if for longer (so that was my fault not the yeast).

I had similar results with champagne - too yeasty. I'll have to try ale next time. Thanks!

Yeast generates about 500 different flavors all mixing in different proportion in the beer, so yes, there can be a 'wrong kind of yeast' ifyou are aiming to make a clean tasting american lager and get a begian or german wheat style yeast. However if it tastes good when you are done, and there is no competion that this is going to, then I don't see a problem.

As to English Ale and Irish Ale... I'm not sure that there is much of a difference, but I don't know. Take a look at the manufactures description of the 2 online.

ALE yeast that I use for better taste of the soda. Well I am using to this yeast since 3 years and I got very nice experience...
